Roasted Tomato Caprese Dip

I made this appetizer for some friends last night and people went crazy over it.  It was gone before it even cooled!  The combination of gooey cheese and buttery pesto, sweet roasted tomatoes and a hint of garlic makes this dish a winner. This wonderful appetizer is as delicious as it is easy to make.  With a couple of simple items, you can create an amazing dish that everyone will love. This will become one of your go to party dishes.. that’s a promise 🙂

Prep Time: 5 minutes

Cook Time: 35 minutes

Serves: 10-12 people as an appetizer


  • 1 pint cherry tomatoes
  • 1 tbsp olive oil
  • 2-3 cloves of garlic, minced
  • 1/2 tsp salt
  • 8 oz goat cheese
  • 8 oz mozzarella
  • 3 slices of bacon
  • 1 cup of pesto


  1. Preheat oven to 375 degrees.  Rinse tomatoes and add to oven safe pan 9″ x 9″ pan.  Add olive oil, garlic, tomatoes and salt to pan and toss.  Put into oven and cook for about 20 minutes or until tomatoes begin to burst.
  2. Take pan out and top with remaining ingredients.  Put back into the oven for 10-15 minutes, until cheese is melted and the dish is heated through.
  3. Serve with crostini, crackers, veggies or anything else you would like!
