By the time the new year rolls around, I’ve eaten and drank my way through the holidays and all I crave is something fresh and light. This dish sums it up perfectly. The peppers are roasted and so flavorful, stuffed with rich mozzarella and topped with the salty, umami flavors of anchovies and olives. Finished off with a drizzle of citrusy olive oil and you have a filling and fresh dinner or side dish.
Although light, the mozzarella and oil help to keep you feeling satiated for hours after. This wholesome dish is something that you can feel good about eating because it’s fantastic and it still keeps up with your resolutions 🙂
Serves: 2 for a meal, 4 for a side
Prep Time: 20 minutes
Cook Time: 10 Minutes
- 4 bell peppers
- 1 ball mozzarella
- 6 anchovies
- 8 greek olives
- 1 tbsp olive oil
- salt and pepper
- Broil bell peppers either in the oven or on a gas stove until skin is blackened. Remove blackened skin.
- Slice mozzarella in 1/2 inch thick slices and stuff into peppers.
- Cut up anchovies and topped stuffed peppers with anchovies, olives, olive oil and salt and pepper. Enjoy!
