Pitaya Breakfast Bowl with Papaya

Now that I mastered the art of preparing a dragonfruit and extracting the flesh, I figured it was time to use it.  I’ve tried so many amazing Pitaya bowl so I wanted to make my own.  To make a great Pitaya bowl, you need a couple of different components.  First, a wonderful liquid to mix it with.  My preference is coconut water or aloe vera juice because they both have a bright, bursting quality to their flavor which brings out the dragonfruit even more.  I also added a cup of greek yogurt, which isn’t traditional of a Pitaya bowl.  I added yogurt because it made the bowl more creamy and less soupy, all while adding 17 grams of protein to keep you full.  Second, some lustrous and juicy fruit to bring color and flavor to your bowl.  Third, some additional healthy add-ons like: flax seeds, hemp hearts, unsweetened coconut meat, chia seeds, matcha – this is your bowl so whatever your heart desires (and you have in your kitchen).  Lastly, you need a bit of crunch – I used toasted pecans you could use other nuts, granola and the list goes on.

The combination is a beautiful and nourishing smoothie bowl that will feed your soul and your body!

Ingredients

  • 1 dragonfruit, (see here how to prepare)
  • 1 1/2 – 2 cups coconut water, aloe vera juice or almond milk
  • 1 cup greek yogurt
  • 3 tbsp hemp hearts
  • 3 tbsp flax seeds
  • 3 tbsp chia seeds
  • 3 tbsp nuts or granola

Directions

  1. Blend the dragonfruit and liquid together in a blend.
  2. Pour mixture into three bowls and top with the additional ingredients.
  3. Enjoy this healthy and nourishing breakfast!
